Pumpkin

This is a very easy and nutritious dish to create. Substituting the Kabocha squash for “pumpkin” results in a creamy dish in which you wouldn’t miss the pumpkin taste. It is tasty and delicious as a vegetarian dish or you can add shrimp for the non-vegetarians.

Ingredients

  • 2 medium size Kabocha squash
  • 1 chopped medium onion
  • 6 -8 cloves chopped garlic
  • 5 wiri wiri peppers
  • 2 tbsp jeera
  • Salt to taste

Instructions

  • Peel, remove the seeds and cut the squash into cubes

  • In a carhee saute the onion, garlic and jeera

  • Add the squash and wiri wiri peppers

  • Season with salt

  • Cook for 20-30 minutes. Turn every 5 minutes so it doesn’t burn
