  • 2 cups finely ground yellow cornmeal
  • 4 cups coconut milk
  • 1½ cups brown sugar
  • 2 tbsp grated coconut
  • 2 tsp almond extract
  • ¼ tsp ground nutmeg

Instructions

  • Preheat oven to 350 degres F

  • In a medium bowl mix together the cornmeal, 1 cup of sugar, nutmeg, almond extract, grated coconut and 2 cups of coconut milk

  • Pour into a greased baking pan and bake for 20 minutes

  • Mix the remaining 2 cups of coconut milk and ½ cup of sugar, and pour over the top of the baked cornmeal

  • Bake for an additional 30 minutes or until most of the liquid had reduced and cake looks moist

  • Cool before cutting
