Coconut Buns

In the love of all that is coconut, this defiantly takes the cake or better yet buns.


        36 Servings

  • 3 cups flour
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 8 ounces cold butter
  • 3 eggs
  • ¼ cup whole milk
  • 2 cups grated coconut
  • ½ cup rasins
  • 1 tsp almond extract


  • Preheat oven to 400°F
  • Mix the cold butter and sugar together

  • Sift the flour and baking powder into the butter and sugar. Mix together so it resembles course sand

  • Add the eggs one at a time

  •  Add the almond extract, grated coconut and currants

  • Add the milk and mix to a stiff consistency, similar to loyah for roti. If the batter is too soft you can sprinkle some flour and mix

  • On a greased  baking sheet, divide the mixture in small 2 inch mounds and sprinkle with a few drops of sugar on top

  •  Bake for 10-15 minutes or until golden brown
