This desert is very easy and delicious to make. Pone can be made with a number of ingredients. It is commonly prepared with a root vegetable and any sweet vegetable that can be grated. Combine all of the ingredients, sweeten, bake and enjoy!

Ingredients

  • 2 pound grated raw cassava
  • 1½ cups brown sugar
  • 1-2 cups coconut flakes
  • 1½ cup evaporated milk ( 1 can)
  • 1½ cup coconut milk
  • 2 cups hot water
  • 2 tsp grated ginger
  • 1 tsp cinnamon
  • ½ tsp almond extract
  • ½ tsp nutmeg
  • 2 tbsp melted butter
  • ¼ tsp salt
  • 1 pinch black pepper
  • ¼ cup raisins (optional)

Instructions

  • Preheat oven to 350 F
  • Peel and grate the cassava. I took the easy way out and cubed the peeled cassava and blended it in my Vitamix blender

  • Combine all of the ingredients in a large bowl and mix well

  • Pour in a greased dish

  • Bake for 45 minutes until golden brown and the top bounces back when it is pressed (similar to firm jello)

  • Cool, cut into cubes and serve
