Chicken Fried Rice

The perfect compliment to many main courses. This version is much healthier than take-out !

Ingredients

  • 2 cups long grain rice (Basmati)
  • 2 eggs
  • 2 boneless chicken breast cut into thin strips
  • 1 chopped large onion
  • 1 whole habanero pepper
  • 3 tbsp cassava cassareep
  • 3 tbsp soy sauce
  • 1 tsp oyster sauce (without MSG)
  • 2 tsp chili powder
  • 1 cup chopped bora
  • Oil for sauteing
  • Salt to taste

Instructions

  • Boil rice. Make sure it isn’t too soft or it will end up soggy. Basmati rice is finished after 10 minutes of boiling. Strain and set aside

  •  Scramble the eggs. Season with salt, pepper and a pinch of chilli powder

  • Fry and break the eggs into small pieces, set aside

  • In a large carhee, sautee the onions with the whole habanero pepper

  • Add the chicken strips and cook for 5 minutes

  • Add 1 tbsp cassareep and 1 tbsp of soy sauce

 

  • Cook for 15 minutes then add the rest of the cassareep, soy sauce and oyster sauce.  You can slightly mash the pepper to release some heat
  • Add the rice to the sauce and mix until it is a uniform mixture
  • Add the bora, eggs, chili powder and additional salt if needed
